How to Make Sheet Pan Quesadillas

- Prepare. Preheat the oven to 425 degrees. You will also need to preheat a large skillet over medium high heat.
- Sauté. Sauté bell peppers and onions in 2 tablespoons of olive oil in the preheated skillet. Cook for about ten minutes. You will know they are done when the peppers are softened and the onions are translucent.

- Brown the meat. Cook the ground beef until it is no longer pink. Once browned, drain any excess grease if necessary. Add the taco seasoning to your cooked ground beef.

- Make the quesadillas. Lay out the tortillas with half of each tortilla hanging over the edge of the pan and one whole tortilla covering the bottom.

- Spread the cooked ground beef mixture evenly over the tortillas. Be careful not to overfill them.

- Sprinkle the shredded cheese on top of the ground beef mixture.

- Fold the tortillas over the filling and use two to three additional tortillas to cover the top.

- Place another sheet pan over the top of the quesadillas to press them down and help keep their shape.
- Bake the quesadillas. Bake in the preheated oven for 20 minutes. Afterwards, remove the top baking sheet.
- Bake for an additional 10-15 minutes uncovered until the tortillas are golden brown and crispy.

- Serve the quesadillas. Cut the quesadillas into individual servings and serve with sour cream or other toppings.
