How to Make Rainbow Rolo Bites

Not only do you not need many ingredients but these take NO time to make. You’ll be done before you can say “magically delicious”…wait, no, um…”melts in your mouth”…nope, that isn’t right either. Okay, before you can say lucky!

  1. Prepare. Preheat the oven to 250 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. Make the pretzel bites. Arrange the square pretzels in a single layer, filling up the baking sheet.
  3. Place one Rolo candy in the corner of each pretzel making sure to leave space to add the rainbow candy later.

  1. Bake the Rolo bites. Place the baking sheet in the preheated oven for 2-3 minutes. Be careful and steady doing this because the pretzels will shift easily and knock the Rolos over. Watch them closely while baking. They will melt quickly and you only want them to soften slightly, not melt completely.

  1. Decorate the bites. Remove the baking sheet from the oven and immediately use a teaspoon to place gold sprinkles on top of each Rolo.

  1. Place one rainbow candy bite in front of each Rolo (pressing ever so SLIGHTY against the Rolo) creating that “Pot O’ Gold” look.

  1. Complete your candy. Allow the treats to cool and set at room temperature for 10-15 minutes. The Rolos will firm up making the rainbow candy and the overall bite more secure and easy to handle.
  2. Enjoy!

Top Tips & Tricks – Pot of Gold Rolo Bites

• Be very careful when placing the Rolo pretzels into the oven and removing them. They will easily slide into each other or the Rolos could fall off/over.

1 ) The low temperature of 250°F will gently soften the Rolos without melting them completely. They will heat fast and become soft before visually appearing soft. If they are shiny, they need to come out to be checked (and are likely ready).

• Place the gold sprinkles quickly to have enough time to place the rainbow candy before the Rolos firm up too much. There’s a bit of a fine line between keeping them soft enough to place all the things and giving them enough time to firm up completely afterward.

• These can be made ahead of time. Store them in an airtight container at room temperature for up to a week or in the refrigerator for up to three weeks.

• The Airhead Xtreme Rainbow Bites are the easiest to use. If you can’t find these, the Airhead Xtreme Rainbow Belts will work too. You will just need to cut them yourself. If going this route, make sure to cut them to fit. You want them to be just long enough to lean up against (but not be taller than) the Rolo.

Want to Change it Up?

There really aren’t too many ways to change up this particular version. However, you can use the mini “pretzel-shaped” pretzels instead of the square snaps. While this works, the square snaps are easier and look better!
